<p>To be honest, lobsters are pretty expensive. Just a single pound of lobster down at the docks and at your favorite seafood restaurant costs a huge amount. In the case of the latter, you shell out $30-$45 for a 1-1.5 pound of lobster. And mind you, the price at restaurants continues to remain high even when the cost at the docks goes down.</p>
<p>One of the reasons why lobsters are so expensive is because there aren’t enough commercial farms that provide lobsters at a more affordable price. On top of that, lobster farming, in itself, is quite difficult. The growth of crustaceans is very slow and is highly prone to fast-spreading lobster disease.</p>
<p>But enough of that, you’re here to find out the taste characteristics of lobsters. So let’s get to that right away!</p>

<li>One-fourth cup of sea salt</li>
<li>One piece of ginger (about 3 inches)</li>
<li>5 garlic cloves</li>
<li>2 teaspoon cayenne (add less if you don’t prefer it too spicy)</li>
<li>1 tablespoon agave nectar (optional to add balance the chili)</li>
<li>Other vegetables of your choice – carrots, cucumber, turnip, beetroot, etc.</li>

<p><em>Steps:</em></p>
<ol>
<li>Soak chopped cabbage in a bowl with 1-liter water plus 2 tablespoons of sea salt. The optimal time for soaking the cabbage in this mixture is about 2 to 4 hours. Make sure no piece of cabbage is sticking out of the water. It should be completely soaked in the water/sea salt mixture.</li>
<li>Add minced garlic and ginger in a smaller bowl. Combine with cayenne pepper and agave nectar. To mix it well, use a food processor to do a better job of blending all these ingredients well.</li>
<li>Drain the cabbage and place the brine in a separate bowl. Add the rest of the ingredients together with the cabbage and slowly toss in the garlic-ginger mixture. Add a few spoons of the brine to coat the vegetables well and cover with plastic wrap.</li>
<li>Take a separate zip-lock bag and fill it with water. Add 2 tablespoons of sea salt to the water and seal it. Place it on top of the plastic wrap that is covering the vegetables. Seal the entire thing with a kitchen towel and place the bowl aside.</li>
<li>It should take about 48 hours for the fermentation process to begin. So keep checking on the vegetables once every day for 5-7 days. A week is a good enough time for the pickled vegetables to taste like Kimchi but with much less salt and no preservatives.</li>
<li>Once the Kimchi is ready, transfer it to a glass jar with a tight seal. You can refrigerate it and it’ll stay fresh for months. You can take it out at any time for eating as a side dish or in cooking recipes such as fried rice, stir-fried noodles, etc.</li>

<p>If you don’t trust what brands put into bottled cardamom oil, you can make it yourself at home. This cardamom oil can be used for up to 8 months.</p>
<ol>
<li>Start with grinding whole cardamom pods and seeds using a mortar and pestle. Even if you have an electric grinder at home, use a mortar and pestle as it extracts a richer smell during distillation.</li>
<li>Use cheesecloth and keep the ground cardamom in the center of the folded cheesecloth. Tie up the edges so the cardamom doesn’t fall out. And place the wrapped cheesecloth in a saucepan filled with hot boiling water. You can use a string to tie up the top and edges of the cheesecloth.</li>
<li>After a few minutes of boiling on the stove, turn the heat off and keep it aside for 12-24 hours. Allowing the ground cardamom to simmer in the water for this long is essential to extracting a rich and strong batch of cardamom oil. You will notice less water after 24 hours of simmering.</li>
<li>You’ll also notice oil floating on the surface of the water. Take a cotton ball to absorb all that oil from the water and squeeze the liquid into a glass jar.</li>
<li>Cover the saucepan with another cheesecloth and keep it under direct sunlight. Wait for as long as is needed for the water to completely evaporate in the saucepan. What will be left inside the saucepan is the cardamom oil which you can empty out in the same glass jar!</li>
